"Syrato" is what happens when you carbonic ferment Syrah and Moscato Giallo separately, then throw them into a Qvevri together to see what sticks. The result? A 50/50 co-fermented, wild-hearted hybrid that defies every rule in the book — and tastes like a tropical chilled red from another dimension.
Sustainably farmed Syrah from Harcourt meets skin-contact Moscato Giallo from Heathcote, unified through ancient Georgian amphora magic and a healthy disregard for convention. It's part lo-fi red, part sunshiney white, all attitude.
Expect a zippy, fruit-charged sipper with juicy plum, lychee, and citrus rind over a savoury, tannin-laced structure that keeps things grounded. Serve it cold and don’t overthink it — this one’s made for the esky, not the cellar.

Andy’s a mathematician-turned-restaurateur who took one sip of Clever Polly’s natural lineup and never looked back. Think: Jura obsession, Georgian amphora, cloudy whites, pet nat fizz, and a healthy fear of glyphosate. He chills all his reds and rides a Onewheel. Naturally.
